Pumpkin Soup with Ginger and Cashews

Serves: 2 cups
Ingredients
  • 1 box Sprouts brand pumpkin soup
  • 1/2 Tablespoon olive oil
  • 1 clove garlic minced
  • 1/4 white onion, finely chopped
  • 1/4 cup cashews, chopped
  • 1 Tablespoon prepared ginger (in a tube)
  • optional: 1 Tablespoon chives for garnish
Instructions
  1. Heat oil in a soup pot. Add the onion and saute until it starts to caramelize (about 5 minutes).
  2. Add the cashews, ginger and garlic and cook another minute.
  3. Pour the boxed pumpkin soup into the pot and simmer at medium for about 20 minutes.
  4. At this point if you want this to be smooth you would need to throw all of it in the blender.
  5. I love the crush of the cashews in the soup and didn’t blend mine.
  6. Season with salt and pepper, top which chives and serve.
