Add an extra kick to your burgers with this Wasabi Avocado Mousse.
There is something about following directions—you don’t always end up where you intend even if you’re reading line by line. My mom told me stories about how she would blame it on English being her second language. She told me dozens of time to read it twice. Somehow I can still hear her saying “did you read the directions”?. Following the path of logic, one recipe turned into a disaster. Calling her on the phone and crying, asking what I did wrong, an uncomfortable silence and then the I told you….but this one time she stopped herself and said. Let’s find a way to salvage it. What if we take a step back and look at the dish.
Now remember, this all happened years ago, when I was a novice cook. I was attempting a guacamole. I know it sounds like how the heck could anyone mess that up? What kind of person needs directions to make guacamole anyway? We now lovingly call that recipe a mousse, because it wasn’t chunky, but so smooth. I whipped it up in the blender. But mom made it all right again. Mousse that was the perfect topping for sandwiches and burgers.
You see, the recipe said “You can whip up the best guacamole with this recipe.”
Years later, I modified it, by adding wasabi.
- 1 avocado
- 1 to 2 teaspoons Wasabi Paste
- 4 Tablespoons Mayo
- 1 teaspoon Sake or Mirin
- Juice of 1/2 a lime, or lemon
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 Tablespoon Soy Sauce
- 1/2 teaspoon Sesame Oil
- Mash the avocado in a bowl until it becomes a smooth puree. Then add your mayonnaise, wasabi paste, soy sauce, mirin, salt and pepper to the mix.
- Slice your lime in half and squeeze the juice in with the other ingredients before mixing it together well until you have a smooth, even mousse with a light green colour.
