Roasted Vegetables with Spiced Pepitas & Sunflower Seeds #SundaySupper

Serves: 8
  • 2 carrots, diced
  • 1 small acorn squash, cut into chunks
  • 6 ounces brocolini, broken into florets
  • 1 cauliflower, broken into florets
  • 1/8 cup olive oil
  • 1/4 teaspoon pepper
  • 3/4 teaspoon salt
  • 1/8 cup pepitas
  • 1/8 cup sunflower seeds
  • 1 1/2 teaspoons Olive Oil
  • 1 teaspoon sugar free maple syrup
  • 1/2 teaspoon coarse sea salt
  • 1/8 teaspoon cayenne pepper
  1. Preheat oven to 300 degrees F.
  2. Place foil, or a silpat on a rimmed baking sheet.
  3. Whisk olive oil, syrup, salt, and cayenne in a medium bowl.
  4. Add seeds and toss to coat.Turn onto your prepared baking sheet.
  5. Bake, tossing once, until mixture is golden brown, 15 to 20 minutes.
  6. Remove from oven and let cool on baking sheet.
  7. While the seeds are baking, cut up your veggies and set aside.
  8. Turn the heat up on the oven to 425 degrees F.
  9. In a large roasting pan, add the cut up veggies.
  10. Season with salt and pepper
  11. Drizzle olive oil onto vegetables and toss to coat.
  12. Bake for 35 to 45 minutes tossing vegetables halfway through until vegetables begin to char.
  13. Remove from oven add the seeds and let cool two minutes before serving.
Serving size: 144 Calories: 82 Fat: 4.5 Saturated fat: 0.6 Carbohydrates: 10.9 Sodium: 375 mg Fiber: 2.5 Protein: 2.1
