Layered Chicken Salad #Sundaysupper

You can make this as a full salad and serve immediately or put them in mason jars for a salad to go. I don’t suggest that you purchase rotisserie chicken. It has a lot of fat. Instead, I just pan fried chicken breasts with salt and lemon pepper. Let them cool, then shred. NOTE: This salad dressing should be kept cold. If you can’t keep it cold, use it within 45 minutes of removing it from the fridge.
Ingredients
  • [b]DRESSING[/b]
  • [br]
  • 1 cup plain Greek Yogurt
  • 1/2 cup Light Mayo
  • 1/2 cup water
  • 4 teaspoon dried buttermilk
  • 1 teaspoon coarse sea salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • 1/2 teaspoon balsamic vinegar
  • 8 roasted red bell peppers strips from a jar, drained and sliced 1/4 inch thick
  • 2 avocados, diced
  • 16 ounces boneless skinless chicken breast, cooked and shredded
  • 1 cup mixed spring salad
Instructions
  1. To make the salad dressing
  2. Mix all ingredients and store in an airtight container
  3. Start with the bell peppers at the bottom of the jar. Layer in the tomatoes, then the avocado and chicken. Top with the mixed spring greens.
  4. When ready to eat you can pour your dressing into the jar and enjoy!
