I decided to make this incredible Tex-Mex Chopped Salad.

Ingredients
  • 1 cup corn
  • 1 cup black beans
  • 1 avocado, chopped
  • 1 cup green leaf lettuce, chopped
  • 1 cup tomatoe, chopped
  • Manchego cheese wedges
Instructions

    Your salad looks so pretty! What a terrific idea to make a Tex Mex chopped salad. My orange and purple farm share peppers would look very nice alongside your black beans and corn. You eat with your eyes, and what a great way to get in all those colors.
