Cilantro Lime Corn on the Cob

There is something special about corn.  It’s one of the sweetest veggies that almost everyone loves to eat.

Yesterday I shared a great tasting recipe for Cilantro Lime Butter.  Use that great zesty butter on these Grilled Cilantro Lime Corn On The Cob. What I love about this recipe is you can roast them or grill them.

Cilantro Lime Corn recipe

Cilantro Lime Corn on the Cob

Serves: 4
If you decide to roast the corn, set oven to 450 degrees and roast for 25 minutes. Make sure they are individually wrapped in foil.
Ingredients
  • 4 ears of corn
  • 2 tablespoons [url href=”http://noshmyway.com/2013/05/06/cilantro-lime-butter/”]Cilantro Lime butter[/url]
  • 1 teaspoon chopped cilantro (for garnish)
Instructions
  1. Preheat your grill and set to indirect heat (outer burners on interior burns off or on low)
  2. Butter each corn with the cilantro lime butter. (about 1/2 tablespoon per cob)
  3. Wrap each corn in foil.
  4. bake in oven for 25 minutes
Notes
4 PP per cob. Remember to add additional PP if you add more butter.

I like to cook mine cut in half.  They are so cute and much easier to eat too. 🙂

    You are making me drool. I LOVE corn on the cob, but alas, 75% of the household cannot eat it on the cob right now. Heck, by the time the corn is in season here, it will be down to 66% but still, I’m outnumbered. The best I can do is cook the corn, secretly eat a cob myself, and cut the rest off to freeze and use throughout the year until next season. I love the idea of mixing cilantro lime butter with the cut off kernels to make a zesty side dish all can eat.
