Slow-Cooked Beef in Merlot

Right now I am on cloud nine.  Why?  Well it’s as simple as making a meal that everyone in the house loves.  But especially the hubby.  I made Slow-Cooke Beef in Merlot last night.  When the hubby was all done eating, he had dribbled a ton of the juice onto his white tee-shirt.  I told him that I wanted to take a photo of him in his tee-shirt, but I guess he is just not like the Marlboro Man who doesn’t mind his photo plastered all over the internet.  So, he kindly passed on the photo opportunity.  But it made me feel so happy that he devoured my dish.

Slow-cooked Beef in Merlot 003I love it when the photo shows the steam coming from the dish.  One of the great things I love about slow-cookers.  It keep the food nice and hot.

Ingredients
  • 2 pounds stew meat, cubed
  • 1 cup Merlot
  • ¼ cup vegetable broth
  • 1 shallot, thinly sliced
  • 3 tablespoons dried minced onions
  • 1 Tablespoon Arrowroot
  • Salt and pepper to taste

Directions
  1. In a slow-cooker combine all the ingredients above.
  2. Set to high 6 hours
  3. Serve over egg noodles

Slow-cooked Beef in Merlot Recipe

A simple beef slow-cooked in Merlot.  YUM.  If you don’t cook or drink alcohol just substitute the wine with a vegetable broth.  I prefer using a vegetable broth other a beef or chicken broth to get the richness of all the veggies in the broth.  Especially since this recipe does not call for slow cooking veggies.

  1. Marlene, I love the steam too–unless it’s heading straight to my lens!

    We try to eat together as a family as much as possible. Sports and after school activities work against us, but so far we’ve managed to have each kid eat with at least one parent each evening that we can’t all sit down together.

    I’ve got a single remaining package of beef stew meat in the freezer from the cow, and this looks like an excellent use for it.
