Cinnamon Raisin Swirl Cookies

I have a confession to make.  I have a really bad problem with Biscoff spread.  I bought a jar of it and, obsessed myself right through the whole jar, using a spoon.  It is a very dangerous product  for me.

So when I came across that beautiful jar again at the store.  I picked it up.  Then I set it back on the shelf.  But right next it was Peanut Butter & Co. brand Cinnamon Raisin Swirl.  It’s peanut butter blended with cinnamon and raisins.  I bought that jar instead.

Here is the good news.  I liked it but not like the Biscoff spread.  I had no desire to sit on the couch with the jar and a spoon.

I started thinking about my three ingredient peanut butter cookies that I made a while back.  And that’s when I decided to make Cinnamon Raisin Swirl Cookies using just three ingredients.

Ingredients
  • 1 cup Cinnamon raisin Swirl spread
  • ⅛ cup Splenda sugar blend
  • 1 egg

Directions
  1. In a medium size bowl, combine all the ingredients.
  2. Refrigerate for about an hour to get the dough to firm up a bit
  3. Pre heat your oven to 325
  4. Roll the dough into 14 balls and bake for 18 minutes.
  5. Cool on wire rack.

Bam! It’s that easy.  I love this recipe because it only makes 14 cookies.  Some recipes yield 48 cookies.  I would probably eat about 40 of them.Okay maybe 48 of them.

  1. I have eaten a can of sweetened condensed milk with a spoon. In one sitting.

    Ok, to be honest, I sat on the kitchen stoop and shared it with my Basset hound. And, I was not old enough to drive a car/vote/serve in the military so I consider it a youthful excess.

    I also don’t recall any stomach upset afterwards. Hmmm.

    That said, I love any cookie recipe that makes just enough and only needs a couple of ingredients. I have to freeze scoops of cookie dough so that I don’t make a whole batch at a time. Or only make cookies to bring to events.
