With Valentine’s day approaching sugar and sweets dominate our minds. Our loved ones think they should buy us boxes of candy.
I think it’s much more romantic to have a dinner party for two and end it with individual desserts. It’s the best way to ensure you don’t grab any seconds and even better when there isn’t anymore for the next day.
So for the Valentine’s Day splurge, make my Vanilla Bean Cupcakes recipe for two. Just two. How wonderful is that?

Psst. Don’t tell anyone, but I didn’t share the second one with the hubby.
No, I didn’t eat the second one. I gave it to my baby girl. The hubby wasn’t home and I knew he wouldn’t eat it and I had to get it out of my sight. So my baby girl was the lucky one.
- FOR THE CUPCAKES
- 1 egg white
- 2 Tablespoons sugar
- 2 Tablespoons. butter, melted
- 1 teaspoon vanilla bean paste
- ¼ cup flour
- ¼ teaspoon baking powder
- ⅛ teaspoon salt
- 2 Tablespoons 2% milk
- FOR THE FROSTING
- 3 Tablespoons butter
- 1 teaspoon vanilla bean paste
- 1 teaspoon water
- ¼ cup confectioner’s sugar
- To make the cupcakes:
- Preheat oven to 350
- Whisk together the egg whites and sugar.
- Add the butter and vanilla and whisk to combine.
- Add flour, baking powder, and salt; stir until smooth.
- Stir in milk.
- Pour into two cupcake liners
- Bake 10 to 12 minutes. Remove and allow to cool completely before frosting.
- For the frosting
- Combine all the frosting ingredients together in a small bowl and frost on cooled cupcakes.

Marlene, how wonderful to make ‘just enough’ cupcakes. I can’t resist sweets and would be gobbling them all up myself. It’s why I freeze bacon and cookie dough–otherwise the entire batch would get demolished!
I never like to go out to eat on holidays [except for Thanksgivings/Christmases in Hawaii]. Too many crowds, long waits, too expensive, and the food not as good as I could make at home for the most part. Instead I like to fix things that I know we like that I don’t usually make. I do that for birthdays as well.
