I have no idea what got in to me today. I bought one of those Jenni-O oven ready turkey breasts. It’s a frozen turkey breast that roasts from frozen in a plastic bag in the oven. It takes approximately 2 1/2 hours to cook.. Before I know it I have whipped up a creative stuffing and some mashed potatoes.
Since the turkey breast was already in the oven and my oven is not large enough to cook the turkey and the stuffing, I decided to use the stove top to make my stuffing. This also meant that I had to toast my bread on the stove top as well.
How did that happen?
Anyway, I believe in cooking what I have rather than running to the store for a specific ingredient, so I created this stove top stuffing that is out of this world.
3 PP per serving
- 10 slices 45 calorie wheat bread, cubed and toasted
- 6 slices center cut bacon
- 1 granny smith apple, chopped
- 1 Tablespoon minced onion (I used dried)
- 1 cup chicken broth
- 1 Tablespoon savory
- 1 tablespoon garlic powder
- salt and pepper to taste
Have your cubed bread in a large bowl set aside.
In a large frying pan on medium high heat, fry the bacon until it is nice and crisp. Set aside.
In the same pan, toss in the apples and the minced onions until the apple gets soft.. Add the savory and the garlic powder. Remove from heat.
Add the crumbled bacon and the apple onion mixture to the bread.
take the bread mixture and put it back on the stove top add the chicken broth and simmer until it is heated through.
It was fun making this mini Thanksgiving dinner. It’s a great way to enjoy all those holiday dishes in a smaller quantity. If you are not cooking for a large group, the Oven ready turkey breast is really very good.
