I just love it when I get the opportunity to go to the local Farmer’s Market. We walked past the berry stand and the sweet smell from her berries were calling out to me. I couldn’t resist. So I bought an assortment of berries.
My youngest girl has been hounding me to make my shortcakes for her. And with these fresh berries I set out to do just that.
I never liked stacking two shortcakes on top of each other. They get messy and, frankly, is a bitch to eat.
I made a batch using the assorted berries and topped it with Chobani Vanilla flavored Greek Yogurt.
I must admit, these came out really good. Once you bake them and cool them, You can split them so you have a top and bottom. I chose not to do that.
3 PP per serving
- Your favorite berries (about a pint)
- 1 cup Heart Smart Bisquick
- 2 Tablespoons washed raw sugar
- 1/3 cup 2% milk
- 12 ounces vanilla flavored Chobani yogurt
Pre heat oven to 425.
Mix the Bisquick, sugar and milk together.
Drop by Tablespoonful onto an ungreased cookie sheet. You should end up with 6 shortcakes.
Bake for 10 to 12 minutes.
Top with the berries and 2 ounces of Chobani Vanilla flavored Yogurt.
You can make the shortcakes ahead of time and have these as part of your Christmas morning breakfast, or brunch. Or, you can make them for your little girl, just like I did. Have a great weekend.
