It’s time to pull out the slow cooker again. I had some chicken thighs in the freezer and I needed to make something with them soon.
I didn’t want to spend a lot of time in the kitchen, so I decided to slow cook these in my crock pot.
I used bone-in because that is what I had, compliments for Sarah. I used a BBQ sauce that is 1 PP for 2 Tablespoons, so adjust your recipe according to the BBQ sauce you use.
Ingredients
Serves 4
9 PP per serving
4 chicken thighs, skinless, bone in (about 1 1/2 pounds)
1/2 teaspoon salt
black pepper to taste
1/2 cup barbecue sauce
1/4 cup honey
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon hot pepper sauce
DIRECTIONS
Sprinkle chicken with salt and pepper.
Place on a broiler pan. Broil 4-5 inches from the heat for 6-8 minutes on each side or until juices run clear.
Transfer to slow cooker.
In a small bowl, combine the barbecue sauce, honey, mustard, Worcestershire sauce and hot pepper sauce.
Pour over chicken; stir to coat.
Cover and cook on low for 4 hours or until heated through.
