Chicken In A Biscuit

Good News for me!  I am finally going to have the opportunity to attend Fitbloggin 2013.  It will be in Portland, Oregon this year.  It’s the 4th annual event.  I am a member of the Local Fitbloggin group and met many wonderful local fit bloggers.  I am truly thrilled to be able to finally attend this incredible 3-day conference.

Having this opportunity and making the decision to attend this event came at a perfect time for me.  Work has been so busy and extremely stressful.  Luckily for me, my colleague that I support and the group that I provide the data for are awesome.  But knowing that I have this event to look forward to, makes it all worth it.

If you find that you don’t have a lot of time to make a huge dinner, try these simple appetizers and enjoy them with a huge salad.  By the way, the hubby wanted to eat them ALL, but he had to split them with Hunter.  I managed to sneak in one biscuit.

I buy organic cooked roasted chicken breast slices from Costco.  It’s handy and works great for making chicken salad sandwiches too.  Try my Chunky Guacamole Chicken Sandwich for a great quick and healthy lunch.

Ingredients

Chicken In A Biscuit 001

Makes 8 biscuits

5 PP per biscuit

  • 1 container of Pillsbury refrigerated reduced fat grands biscuits
  • 3 individual packets Alouette 40 calorie cheese
  • 4 ounces shredded cooked chicken breast
  • 1/2 teaspoon garlic powder

Directions:

Preheat oven to 375

Place cheese and garlic powder in a small bowl and combine.

Stir in chicken.

Remove biscuit dough.

Snip each biscuit in half (length wise)  (I just snipped it with a pair of scissors)

Place about a tablespoon of the chicken mixture in each biscuit.

Press and seal.

Place on baking sheet.

Bake for 12 minutes or until golden brown

There you have it.  Chicken inside a biscuit, literally.  And better tasting too. Smile
