Today is the first day of October. October is Breast Cancer Awareness month. As a survivor myself (6 years and counting), and for all those you are suffering, I decided to dedicate a few recipes to Breast Cancer Awareness month. I am going PINK.
For the month of October, I will include several PINK recipes.
Here is my first one.
In Italy, they consider Vodka Sauce PINK in color, compared to a red marinara sauce.
Feel free to use the pasta of your choice. I chose what I had on hand which was Organic Whole Spelt Orechette.
Pasta In A Vodka Sauce
Ingredients
Serves 4
5 PP per person
- 8 ounces Organic Whole Spelt Orechette Pasta (I used Baia, artisan made in Oakland California)
- 3 slices Center Cut Bacon (Oscar Mayer)
- Toasted garlic (click for recipe) or 3 cloves, minced
- 1/2 onion diced
- 1/2 cup vodka
- 15 oz. can crushed tomatoes
- 1/4 cup fat-free half-and-half
- 2 teaspoons Worcestershire sauce
- Crushed red pepper
- Black pepper
Directions
Fry the bacon and set aside. Crumble when cooled.
Add the chopped onions. and cook until translucent. add the garlic if you are not using my toasted garlic.
Add in vodka. Bring to a boil and reduce by about half.
Add in tomatoes, half-and-half, Worcestershire, red pepper and black pepper and toasted garlic. Heat through and simmer for 15 minutes.
Cook pasta according to direction on package.
Pour the sauce over the pasta.
Top with the chopped bacon.
