As we age, it is interesting how we reminisce about the “good ole days”. We lived for the moment never even thinking about all the memories we were forming. As we age, we definitely live for the memories of days gone by.
I love to travel. To bad I don’t get to do that as much as I would like. Our time will come as soon as our children finish college (One can only hope). Anyway,one of my favorite trips that I took was with my friend Lil S. We took a trip to Puerto Vallerta. Lil has been my friend since we were little kids growing up in San Francisco. As a matter of fact, no matter how much time passes between visits with each other, it always seems like it was just yesterday that we last spent time together. it’s seamless. I dont’ think I ever formed another bond with anyone else, other than the hubby, besides her. We definitely had a blast on our trip.
One of the nights, while in Mexico, we were out way past our bedtime, but there was a disco we wanted to go to (yes, I was from the disco era), but I definitely needed a caffeine boost.. So I ordered a Mexican Coffee. OMG it definitely left a lasting impression on my taste buds.
This one below is non alcoholic, but it definitely brought back memories of my younger days.
1 PP per serving
- six ounces freshly brewed coffee
- 1 tablespoon lite chocolate syrup
I made a blend of cinnamon and sugar. I made a lot but the ratio is about 2 to 1. two teaspoons of sugar to 1 teaspoon of cinnamon.
Wet the rim of your glass or mug, then dip it in the cinnamon sugar blend.
Add 1/4 teaspoon of the cinnamon sugar blend to the bottom of the glass.
Add 1 tablespoon Lite chocolate syrup.
Pour 6 ounces of freshly brewed coffee into the prepared glass.
For garnish, scoop fat-free non dairy cool whip onto the coffee and top with a bit more chocolate syrup.
I love licking the cinnamon sugar off the rim of the glass :_)
Optional choices: tequila; or kahlua, shaved chocolate or a sprinkle of nutmeg on top of the whipped cream.
