Oh my goodness. There just aren’t any words that can describe my Monday at work today. It was so bad, that I had to get up and take a walk. Kona loved it though. Not only that, but I was supposed to leave early to get to my financial advisors office by 4:00, but ended up having a conference call at 3:30.
I am exhausted and wish it were Friday already. Speaking of time… Has anyone read the Timekeeper, by Mitch Albom? I just downloaded it to my Kindle late last night. I hope it’s good.
Oh Remember,” I want my MTV.” Well, that’s exactly how I felt at Safeway yesterday when I tried to get my weekly fix of Chobani yogurt. They were out of my favorite flavors. Vanilla and honey are my all time favorites. So I decided that I would give Yoplait 100 calorie Greek a try. I am here to say, after tasting the Yoplait,” I want my Chobani!”. Yoplait left an aftertaste in my mouth that I just didn’t like. I actually disposed of the rest, it was that bad. I rather fight, than switch!
Ingredients
Serves 1
4 PP per serving
- 1 cup baby spinach leafs
- 1/2 medium apple, Granny Smith, thinly sliced
- 1/4 cup red onion, julienned
- 2 tablespoons reduced fat crumbled feta cheese
- 1/2 tablespoon Olive Oil
- 1/2 Tablespoon balsamic vinegar
- 2 teaspoon thyme, fresh
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon coarse sea salt
Directions
In a large bowl, toss together spinach, apple, and onion.
Whisk together the olive oil, balsamic vinegar, 2 teaspoons snipped fresh thyme or 1/2 teaspoon crushed dried thyme, 1/2 teaspoon Dijon-style mustard, and 1/4 teaspoon salt.
Pour over salad, toss and serve.

Thanks Marisol. I sliced the apples for looks. If I was giong to make it for me, I would chop them into smaller pieces. But the dressing on this was so good.
