I will be the first one to admit my love affair for all things sweet. (That’s one of the reasons why I married the hubby). There probably isn’t a candy bar on the market that I haven’t tried including some candy bars they no longer make. I do miss my sweets.
Whenever I get a chance to try baking something that isn’t chock full of calories I am all over it. We all know sugar is not on the list of healthy foods, and I am not crazy about trying to substitute refined sugar with an artificial sweetener. And I am really not that crazy about trying to replace it with other crazy ingredients such as applesauce, or black beans. Yikes! But, if I can make a substitute using my beloved Chobani yogurt, I will.
Umm is muffinette even a word?
Cinnamon Sugar Muffinettes

Ingredients
2 PP per muffin
Ingredients
2 cups flour (I used 1 cup white whole wheat flour)
1 Tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
2 large eggs
1 cup Chobani brand Plain Greek yogurt
2/3 cup packed brown sugar
4 Tablespoons coconut oil
2 teaspoons vanilla extract
Topping Ingredients
2 Tablespoons butter, melted
1/8 cup sugar
1/2 teaspoon cinnamon
Preheat oven to 400.
Spray a mini muffin tin with non stick spray.
In a large bowl, whisk flour, baking powder, baking soda salt, and cinnamon.
In a separate bowl, whisk together eggs, yogurt, sugar, oil, and vanilla.
Add flour mixture and mix with light strokes until the dry ingredients are just moistened.
Do not over mix; batter will not be smooth.
Drop about a tablespoon of the dough into each muffin cup and bake until a toothpick inserted in one or two of the muffins come out clean, about 10 to 12 minutes.
While the muffins are baking, melt 2 tablespoons butter and place in a bowl.
In a separate bowl, combine the sugar and cinnamon.
As soon as the muffins are done, dip a pastry brush into the melted butter and brush each muffin, one at a time with the melted butter and then dip the tops into the cinnamon/sugar mixture.
Set on a rack to cool.
Yields 40 mini muffins
