Oh the joys of testing out great foods, like PIZZA. Today I am using one of those store-bought packaged pizza crusts. Cut into eight slices the crust totals 130 calories. So if we stick with zero PP toppings, then we only need to count the crust. Now were talking. Oh, wait, cheese. We need cheese. 2 wedges divided by eight slices, I think it will work.
Grilled Garden Pizza
1 Pizza makes 8 slices
2 slices come out to 9 PP
- 1 Freschetta Brand Original Pizza Crust
- 1 grilled zucchini, thinly sliced
- 2 wedges Laughing Cow Light cheese
- Italian parsley, chopped
- grape tomatoes, halved
- Sliced Crimini mushrooms
First make sure you grill your zucchini. I sliced mine up and grilled them on the stove.
Spray one side of the crust with olive oil spray. Slide onto the grill using the indirect heat method. Grill for about 3 minutes. Remove from the grill and bring back into the kitchen. This method obtains great grill lines on your crust. That is going to be the toUse the grilled crust to place all your toppings. Start with spreading your Laughing Cow wedges onto the crust. Next, add the grilled zucchini slices and the mushrooms. Sprinkle with the parsley. Place the tomato halves around the edge of the crust.
Return to the grill for another three minutes.
Slide off the grill. Slice and serve.
This pizza testing is becoming extremely difficult. Both pizza’s rank #1 on my list.
