Grilled Salmon

Over the weekend, I bought a small wood smoker to use on our new gas grill.  And I can’t wait to use it.  I soaked the apple wood chips in a sherry wine.

Today the department that I support held a BBQ as a thank you for all the hard work everyone has been doing and for the contract employees too.  It was held at the Shadelands Museum. A relatively cooler day outside, so it was nice not to have to be out in the super hot weather.  I had the opportunity to reacquaint myself with some former co-workers and meet some new ones too.

After the BBQ I popped into Trader Joe’s real quick to pick up some salmon for dinner tonight.

We love our new grill so I am going to make a grilled salmon on the “Q”, using apple wood chips soaked in Sherry wine.

Grilled Salmon

Ingredients

Serves 4

 PP per person

  • 16 oz salmon
  • 1 Tablespoon olive oil
  • heavy-duty foil
  • 1/2 cup vermouth
  • chopped chives
  • salt and pepper to taste

Directions

Place your salmon fillet on a sheet of heavy-duty foil.  Rub one tablespoon of olive oil onto the salmon, sprinkle with salt, pepper and chives.

Fold the foil up on all four sides.  Add the vermouth and continue to fold the foil encasing the salmon.

Heat up your grill and close the lid.  Grill for about 15 minutes.

Now I want you to know that this evening’s dinner was an adventure in the kitchen.  First, I am ready to take my photos when I discover the batteries in the camera are dead.  I rush to find more batteries to no avail.  So I resort to the camera on my phone.

Then, I realize the door to the backyard open.  Smokey, our cat got out and I didn’t know it.  Kona, our puppy, sees the cat outside and races toward Smokey.  Smokey starts hissing and Kona is jumping, howling and literally going ape sh*t.  This is all happening as I am trying to get the grill prepped.  And now have to stop the mayhem that is about to take place.  I have to physically lift the dog back into the house, close the door, go back outside, grab the cat, open the door bring the cat in and to a safe place (the laundry room) and get back to the grill.  All in a days work, they say.
