Healthiest Caesar Salad

Wow, it truly has been a long week and it’s not even Friday yet.  I was in the office again today.  I had a chance to visit some former colleagues and dear friends.  It is always nice to see them.  I have to admit, I love working from home, but I really really really miss the social aspect of going to an office.  I would love to have the best of both worlds.

Earlier this week I received a coupon from a new gym that opened in my neighborhood.  It’s called Fit U.  No contract, month to month, $9.95 to use the equipment or $19.95 for full access including the classes.  When I arrived, three women were sitting outside under a pop up tent.  I asked about the facility and they offered me a “tour”.  I walked into an empty building.  That’s right.  It’s not even finished yet.  She pointed to an area of the building and said, that’s where the circuit training will be, over there is where the aerobics classes will be.  Then she asked me if I wanted to join.  Really?  I said.  I’ll come back when you have completed the gym so I can see if it will be something I might be interested in.  I was surprised they were trying to take enrollment to a gym that isn’t even built yet.

Anyway, I stumbled the word “salad” and found this great Caeser salad recipe.

Healthiest Caesar Salad

Ingredients
  • 8 oz boneless skinless chicken breast
  • ⅛ cup white wine vinegar
  • 1 tablespoon Garlic powder
  • 1 Lime, juiced
  • Black pepper to taste
  • one bag of Romaine lettuce
  • ¼ cup of Chobani 0% plain
  • 1 tablespoon grated parmesan
  • salt and black pepper to taste
  • ½ tablespoon dried Italian seasoning
  • 2 slices “light or carb style” bread, cubed and toasted
Directions
  1. Marinate chicken breasts in white wine vinegar with a the garlic powder, Italian seasoning and a dash of lime & black pepper.
  2. Grill if you have access to a BBQ for 8-10 minutes, or cook in the oven for 15 minutes in the oven at 350 degrees.
  3. Let the chicken sit and self cook for 5-10 minutes off the heat – it will retain the moisture that would otherwise wind up on the cutting board when you cut it.
  4. Put the sliced chicken and the salad into a large baggie, add a ¼ cup of yogurt, Parmesan , black pepper, Italian seasoning, a squirt of lime and shake thoroughly.
  5. Shaking the ingredients together will give you the same flavor for a fraction of the dressing used when pouring it over the top of your salad.
