Next week, on the 21st, I will be hosting a Local Fitbloggin event at my home. Local food and or fitness bloggers get together to chat about our blogs, fitness, and general conversations. This will be the fourth local event we held in the past year. This one is also a House Party sponsored by Silk Fruit and Protein. We will be having a healthy potluck brunch, followed by a stretchy band demo from one of the fitness bloggers and who know what else I will plan. Sound fun? You can be a part of it too. RSVP here.
Since Silk has provided me with coupons, and a few other freebies, Silk is the main theme for this brunch.
Now here is where Pinterest comes in. I saw a pin of mini pancake stacks. Seeing that photo made me want to play in the kitchen. I used Silk in the pancakes and used Chobani as my “butter”.
These little morsels about the size of a quarter, just a tad bit bigger.
Ingredients
Serves 7
Servings size 6 mini pancakes
3 PP per serving
- 1 cup Biskquick
- 1 egg
- 2/3 cup Silk Almond Vanilla
- 7 Tablespoons strawberry banana flavored Chobani Yogurt
- 7 Tablespoons Light Syrup
Directions
In a medium bowl, mix the Bisquick, eggs, and Silk.
Heat a skillet to medium high heat. pour 1/2 tablespoons of the pancake batter into the skillet. Work in batches, They cook quickly. Less than a minute.
Plate one pancake, 1/2 teaspoon yogurt, another pancake, 1/2 teaspoon yogurt, another pancake 1/2 teaspoon yogurt. Top with a strawberry piece. Sprinkle 1/2 tablespoon of light syrup over each stack.
Now, let me tell you, not only were these quick and fun to make, they were mighty delicious.
