Sometimes we are all faced with having to dine alone. I know how easy it is to grab that box of cereal and make yourself a bowl to eat for dinner. Because, why go through the trouble of cooking for just one.
Well, Trader Joe’s sell’s the most incredibly moist breaded chicken breasts. They are frozen and each breast is worth 4 PP. So I decided, I would make myself a lemon chicken with one of those frozen breasts. They are so easy to make.
If you don’t have these frozen chicken breasts, you can still pan fry a chicken breast or bake one and then pour the lemon sauce on top. You can also, chop the chicken breast into chunks and serve over rice or orzo too.
Ingredients
Serves 1
4 PP per serving
- 1 frozen Trader Joe’s breaded chicken breast , or 4 ounces boneless skinless chicken breast
- 1/2 scallion, chopped
- 1/2 lemon, juiced
- 1/2 lemon, zested
- 1/8 cup water
- salt and pepper to taste
- 1/4 teaspoon cornstarch, or flour or Wondra (arrowroot would work too)
- 1/4 teaspoon sugar
- 1 teaspoon low sodium soy sauce, or my favorite, Kitchen Bouquet
Directions
Preheat oven to 400
Heat the chicken for about 15 to 20 minutes.
To make the sauce, whisk together the lemon zest and juice with the sugar, water and cornstarch in a small saucepan. Bring to a boil, whisking constantly until thickened, add the soy sauce or Kitchen Bouquet. Keep warm.
Transfer to a plate and spoon the warm lemon sauce over the chicken. Scatter the scallions over the dish before serving.
You can serve it with your favorite veggies or a huge salad. Or both
By the way, there was enough sauce for two breasts, so no need to double the recipe.
