These Mini Taco Bowls are as tasty as they are adorable., I bought them at Ross the other day. They come two in a box. I figured this was the perfect portion size for lunch or dinner.
You can add any of your favorite taco toppings to these (light sour cream, guacamole, black olives, salsa etc). I wanted to keep them basic so you could easily customize them based on your preferences.
These are fun to serve and eat, so get creative with them.
Here is my recipe:
Serves 1, makes two for 8 PP or 4 PP each
- 3 oz cooked shredded chicken
- 2 corn tortillas
- shredded lettuce and or cabbage
- Mango Salsa
- 1/4 of an avocado, chopped
- 1 tablespoon Taco sauce
Preheat oven to 350
You can use 6, 8 or 10 in tortillas. Here I used the 6 inch ones. Spray the mini tortilla molds with non stick spray. Place the tortilla in the mold and bake for about 10 minutes. Remove and set aside for an additional 5 minutes before removing them from the molds.
Layer your baked tortilla with lettuce/cabbage. I mixed the taco sauce into the shredded chicken, then layered the chicken on top of the cabbage. Next spoon the mango salsa on top. for my last layer, I placed the chopped avocado on top.
