You know, classic dishes are sometimes the absolute best. There is a restaurant in my home town called the Yankee Pier. The hubby love’s to order their Wedge Salad. Given the fact that a salad can’t be any easier to make, I decided to make one for us last night. I served it with our Honey Crispy Chicken tenders. And you know the old Iceberg lettuce gets a bad rap for being so boring. But when you add blue cheese, oh my goodness is all I can say.
Classic Wedge Salad
Serves 4
2 PP per serving
Ingredients
- One head of Iceberg Lettuce, cut in fourths
- 4 slices center cut bacon, cooked and crumbled
- 1 green onion, chopped
- 1 small chopped tomato
- 1/2 cup Blue cheese, crumbled
- 8 Tablespoons Yogurt blue cheese salad dressing
Directions
Place one iceberg wedge onto each plate. Top each with a sprinkle of green onions and crumbled bacon. Sprinkle chopped tomato around each wedge, Pour two tablespoons of blue cheese dressing onto each wedge. Serve immediately.
Are you wondering where the tomato’s are? Well, I didn’t have any on hand. The hubby doesn’t like tomatoes so I hardly ever buy them. I am also not a huge fan of tomatoes. Oh did I mention that the hubby took this photo? Me thinks he might be better than me! I no like
