Cinnamon Swirl Loaf

There is something about the holiday season that inspires certain aromas in my kitchen.  One of them being cinnamon.  If you are like me and you love cinnamon, you will definitely love this quick bread.  It’s so crusty on the top and soft and moist on the inside.  What better way to start your day than a nice warm slice of this loaf with your morning coffee or tea.

Ingredients

one loaf makes 12 slices valued at 8 PP per slice

  • 2 cups all purpose flour
  • 3/4 cups sugar
  • 12 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1 1/2 cups Chobani vanilla flavored yogurt
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 1/4 cup packed brown sugar and 1 1/2 teaspoons ground cinnamon

Directions

Preheat oven to 350 degrees

In a large bowl, combine the flour, sugar, baking soda, 1/2 teaspoon cinnamon and the salt.

In a separate bowl, whish the egg, yogurt, oil and vanilla.  Stir into the dry ingredients until moistened..

Mix the brown sugar and cinnamon and set aside.

Spoon a third of the batter into an 8 in x 4 in loaf pan, coated with non stick spray.  Sprinkle about 1/3 of the brown sugar mixture.  Repeat layers twice.  Cut through the batter with a knife to swirl the brown sugar mixture.

Bake for about 45 minutes, or until a toothpick inserted near the center comes out clean.

Cool for 10 minutes before removing from the pan to a wire rack.

Don’t think for one minute that you have to wait for the morning to have  a piece.  Mid morning works, or how about a mid afternoon snack or even raid your kitchen for the proverbial midnight snack.
