Mushroom Risotto – Maltese Style

I have never made risotto before.  My WW leader mentioned that her husband makes a great Mushroom Risotto so I am going to give it a try.

Also the hubby is coming home late since he is at a golf tourney all the way in Salinas and since he hates mushrooms and I love them,  this is the perfect time to give this recipe a try.

Serves 6

7 PP per serving

Ingredients

  • DSCN1465 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, finely chopped
  • medley of mushrooms
  • 12 ounces dry arborio rice
  • 8 ounces dry white wine
  • 1 quart hot vegetable stock
  • 2 tbsp chopped fresh parsley
  • 1 tablespoon light butter
  • Salt and freshly ground black pepper
  • 1 cup grated Parmesan cheese

Directions

Heat stock in a separate pan; set aside.

In a deep pan heat olive oil, add onions and garlic, and sauté slowly for about 5 minutes till onions become soft and translucent.

Add the mushrooms, cook for another 5 minutes

Add the arborio rice and cook for a bit together, add the white wine and allow alcohol to evaporate.

Slowly add the vegetable stock one cup at a time and stir continually, adding each additional cup as it is absorbed by the rice.

Add the butter and continue stirring finish off any stock until all is absorbed by the rice.

Add the parmesan cheese and continue stirring

Season with Salt and Pepper

I think I died and went to risotto heaven.  I think I hit the jack pot.  My first risotto and it is to die for.
