In case you haven’t noticed, I love my new WW Fruits and Veggies A to Z cookbook. I also love the fact that their recipes serve one person. Finally a cookbook that doesn’t need modification for the single person who wants to consume it.
Today, I modified the arugula pasta salad recipe from the cookbook. With a minimal amount of ingredients, you will be amazed at the pop of flavor the arugula adds.
Arugula looks like spinach, but it has a distinct peppery flavor you will love.
Serves 1
4 PP per serving
Ingredients
2 cups arugula leaves- 1/2 cup warm cooked bow tie pasta
- 1/2 cup frozen corn, thawed
- 1 tablespoon light butter spread
- pepper to taste
Directions
Toss the cooked pasta in a bowl with the tablespoon of butter to coat the pasta. Add the arugula leaves, the corn and pepper to taste.
Doesn’t that make you hungry?
If life seems cold to you, kindle fires to warm it.

I don’t go to the meetings (I subscribe to etools) but I may have to stop by WW tomorrow and get this book. As I only cook for one, it sounds like it would be really helpful. What you have posted so far looks amazing.
